@garam masala{1%tsp}
@basmati rice{1%cup}
@olive oil{1%tbsp}
@vegetable stock{2%cups}
@salt{1%tsp}
@black pepper{½%tsp}

Rinse @red lentils{1%cup} thoroughly under cold water. Cut @cauliflower{1%head} into bite-sized florets. Trim and slice @green beans{1%cup} into 1-inch pieces. Mince @garlic{2%cloves} and grate @ginger{1%inch}. Chop @cilantro{½%cup}, reserving a few sprigs for garnish.

In a #medium pot{}, combine @basmati rice{1%cup} and @water{2%cups}. Bring to a boil over high heat, then reduce to low, cover, and simmer until tender ~{15%minutes}. Keep covered off heat until serving.

Meanwhile, heat @olive oil{1%tbsp} in a #large skillet{} over medium heat. Add @cauliflower{1%head} and cook until lightly browned ~{5%minutes}. Stir in @garlic{2%cloves}, @ginger{1%inch}, and @garam masala{1%tsp}, cooking until fragrant ~{1%minute}.

Pour in @red lentils{1%cup} and @vegetable stock{2%cups}. Season with @salt{1%tsp} and @black pepper{½%tsp}. Bring to a simmer, cover, and cook until lentils are soft and cauliflower is tender ~{20%minutes}. Stir occasionally and add a splash of water if needed.

Fold in @green beans{1%cup} and cook until crisp-tender ~{3%minutes}. Remove from heat and stir in most of the @cilantro{½%cup}.

Serve dahl over the basmati rice, garnished with remaining cilantro.
